
Ham and Cheese Crustless Quiche

Ingredients
Quiche
- 1/2 red onion
- 1 courgette
- 200g ham
- 6 eggs
- 1/4 cup milk
- 1 cup cream
- 3/4 cup GF flour
- 1 1/2 tsp GF baking powder
- 250g frozen corn
- 1/2 block cheese, grated
Salad
- 1 apple
- 1 lettuce
- 1 pack walnuts
To Serve
- 1 pack kids tomato chutney

Prep veggies and ham Preheat oven to 200°C. Grease a baking dish about 20x30cm. Finely dice onion; grate courgette; roughly chop ham.

Prep egg mix Whisk eggs in a bowl with milk, cream and 1/2 tsp salt. Sift flour and baking powder into a second bowl and stir to combine. Slowly whisk egg/ cream mix into flour a little at a time, until smooth. Add onion, courgette, ham, corn and cheese, and mix until combined. Season with pepper (optional).

Cook quiche Pour egg mix into greased dish and bake for about 35 minutes, until golden and egg is set.

Make salad Thinly slice apple and roughly tear lettuce. Just before serving, toss in a bowl with walnuts and a drizzle of olive oil and vinegar. Season to taste.

Serve quiche with salad and tomato chutney.
