Creamy Chicken Alfredo Pizza

Ingredients

Pizza

  • 1 pack chicken breasts
  • 1/2 red onion
  • 1/2 pack roasted capsicum
  • 1 pack tomato paste
  • 1 pack pizza spices
  • 1 pack sprouted seed pizza bases
  • 1/4 pack baby spinach
  • 1 pack white pizza sauce
  • 1/2 pack grated 3 cheese mix

Salad

  • 1 lettuce
  • 1 carrot
  • 1 tomato
  • 1/4 pack baby spinach

Steps

  1. Cook chicken Preheat oven to 220°C. Preheat two oven trays. Heat a drizzle of oil in a fry-pan on high heat. Pat chicken dry, dice 2cm and season. Cook chicken in pan for 4-5 minutes, until just cooked through.
  2. Meanwhile, prep toppings and bases Thinly slice onion and roasted capsicum. Combine tomato paste and pizza spices in a bowl with a drizzle of oil. Cut one pizza base in half, then spread tomato mix evenly over bases.
  3. Top pizzas Top pizzas with onion, capsicum, chicken and first measure of spinach. Evenly dollop with white pizza sauce and top with cheese. Season with salt.
  4. Cook pizzas Transfer 1 1/2 pizzas to each preheated tray and cook for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking. Cut pizzas into 6-8 pieces.
  5. Make salad Roughly tear lettuce; peel carrot into ribbons; cut tomato into thin wedges: roughly chop second measure of spinach. Toss with a drizzle of olive oil and vinegar just before serving and season.
  6. Serve pizza with salad.
