
Mexican Beef and Bean Burritos

Ingredients
Mexican Beef
- 1 pack Mexican beef grind
- 1/2 brown onion, finely diced
- 1 carrot, grated
- 1 clove garlic, minced
- 1 pack Mexican spices
- 1 can chopped tomatoes
- 1/3 can chilli beans
- 1 Tbsp sweet chilli sauce
Salsa
- 1 tomato, finely diced
- 1/2 telegraph cucumber, finely diced
- 1/2 pack Mexican dressing
To Serve
- 4 tortillas
- 1/4 cup grated cheese
- 1 Tbsp sour cream
- 1 pack garlic chilli blend

Preheat oven to 200°C. Prep onion & garlic & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Add beef and cook for 3-4 minutes, until browned. Add onion, carrot and garlic and cook for a further 2 minutes.

Cook beef. Add Mexican spices and 1 tsp salt to pan and cook for 2 minutes, until fragrant. Add canned tomatoes, chilli beans and sweet chilli sauce, bring to a simmer, reduce heat to medium and simmer for about 10 minutes, until thickened.

Prep & make salsa. In a bowl, combine salsa ingredients and season to taste.

Heat tortilla. Wrap tortillas in foil and bake for about 10 minutes or until heated through.

Serve beef and beans in tortillas, top with cheese, salsa, sour cream and a pinch of garlic chilli blend.
