Lemon Chicken with Mash and Caper Crème

Ingredients

Lemon Chicken

  • 1 pack chicken breasts
  • Zest and juice of 1/2 lemon
  • 2 tsp mustard

Mash

  • 800g potatoes, peeled & diced 2cm
  • 1 carrot, diced 2cm
  • 1/2 pack baby spinach
  • 2 Tbsp butter
  • 1/3 cup milk

Broccoli

  • 1 broccoli, cut into small florets

To Serve

  • 1 pack caper crème
  • 1/2 lemon, cut into wedges

Steps

  1. Prep chicken Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Toss in a bowl along with lemon zest and juice, mustard, 3/4 tsp salt and a drizzle of oil.
  2. Prep & cook mash Add potatoes and carrot to a pot with a pinch of salt and cover with hot tap water. Cook on high with the lid on for 20-25 minutes, until very soft. Drain and mash with spinach, butter and milk until smooth. Season to taste.
  3. Cook chicken Heat a drizzle of oil in a fry-pan on medium-high heat. Cook chicken for 5-6 minutes each side, until cooked through and golden. Rest, covered.
  4. Prep & cook broccoli Bring a pot of salted water to the boil. Place broccoli in pot and cook for 3-4 minutes, until bright green and tender. Drain, drizzle with olive oil and season to taste.
  5. To finish Thinly slice chicken and toss in any resting juices.
  6. Serve mash topped with chicken, broccoli, caper crème and a wedge of lemon.
