Pork Ribs with Wedges and BBQ Sauce

Ingredients

Wedges

  • 800g potatoes, cut into wedges
  • 1 pack wedge spices

Slaw

  • 1 carrot, grated
  • 1/4 cabbage, shredded until have 2 cups
  • 1/3 pack baby spinach, roughly chopped
  • 2 Tbsp mayo

Ribs

  • 1 pack pork ribs
  • 1/2 pack BBQ sauce

BBQ Mayo

  • Remaining BBQ sauce
  • 2 Tbsp mayo (optional)

Steps

  1. Preheat oven to 220°C. Prep & cook wedges. Toss potato wedges with wedge spices and a drizzle of oil on a lined oven tray. Season and roast for about 30 minutes, until tender and golden.
  2. Prep & make slaw. Toss slaw ingredients in a bowl to combine. Season to taste.
  3. Cook ribs & make BBQ mayo. Place ribs on a lined oven tray and brush with first measure of BBQ sauce. Cook, below wedges, for about 20 minutes or until cooked through. Combine remaining BBQ sauce and mayo.
  4. Serve ribs and wedges with BBQ mayo and slaw on the side.
