Lemon Garlic Chicken with Potatoes and Bok Choy Slaw

Ingredients
Potatoes
- 400g potatoes, diced 3cm
Lemon Chicken
- Zest and juice of 1/2 lemon
- 1 Tbsp honey
- 1/2 Tbsp soy sauce
- 1 pack lemon chicken spices
- 1 pack chicken thighs
Slaw
- 1 baby bok choy, thinly sliced
- 1 lettuce, shredded
- 1 carrot, grated
- 1 pack mustard mayo
- 1 Tbsp lemon juice

Preheat oven to 220°C. Prep & cook potatoes. Toss potatoes on a lined tray with a drizzle of oil. Season and roast for about 25 minutes, until golden and tender. Turn once during cooking.

Prep chicken. In a bowl, combine lemon juice and zest, honey, soy sauce, lemon chicken spices and 1/2 tsp salt. Pat chicken dry and cut into 2cm strips and toss through marinade.

Prep & make slaw. Toss slaw ingredients in a bowl and season to taste. Set aside.

Cook chicken. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook chicken strips for about 3 minutes each side, until cooked through. Rest covered.

Serve potatoes topped with chicken and any chicken resting juices. Serve slaw on the side.
