Lemon Garlic Chicken with Potatoes and Bok Choy Slaw

Ingredients

Potatoes

  • 400g potatoes, diced 3cm

Lemon Chicken

  • Zest and juice of 1/2 lemon
  • 1 Tbsp honey
  • 1/2 Tbsp soy sauce
  • 1 pack lemon chicken spices
  • 1 pack chicken thighs

Slaw

  • 1 baby bok choy, thinly sliced
  • 1 lettuce, shredded
  • 1 carrot, grated
  • 1 pack mustard mayo
  • 1 Tbsp lemon juice

Steps

  1. Preheat oven to 220°C. Prep & cook potatoes. Toss potatoes on a lined tray with a drizzle of oil. Season and roast for about 25 minutes, until golden and tender. Turn once during cooking.
  2. Prep chicken. In a bowl, combine lemon juice and zest, honey, soy sauce, lemon chicken spices and 1/2 tsp salt. Pat chicken dry and cut into 2cm strips and toss through marinade.
  3. Prep & make slaw. Toss slaw ingredients in a bowl and season to taste. Set aside.
  4. Cook chicken. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook chicken strips for about 3 minutes each side, until cooked through. Rest covered.
  5. Serve potatoes topped with chicken and any chicken resting juices. Serve slaw on the side.
