Mexican Beef Loaded Kumara Wedges with Chipotle

Ingredients

Kumara

  • 800g kumara, cut into wedges

Mexican Beef

  • 2 carrots, grated
  • 1 pack beef mince
  • 1 pack Mexican spices
  • 1 pack tomato paste
  • 1/2 pack chipotle sauce
  • 1 1/2 cups beef stock

Salad

  • 250g frozen corn
  • 1/2 lettuce, shredded
  • Remaining chipotle sauce
  • 1 Tbsp mayo

To Serve

  • 1/2 cup cheese, grated
  • 1/4 cup sour cream
  • 1 pack garlic chilli blend

Steps

  1. Preheat oven to 220°C. Bring a medium pot of salted water to the boil. Prep & cook kumara. Toss kumara on a lined oven tray with a drizzle of oil. Season and roast for 20-25 minutes, until tender. Turn once during cooking.
  2. Prep carrots & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Cook beef for about 4 minutes, until browned. Add carrots, Mexican spices and 1 tsp salt to pan and cook for 2 minutes, until fragrant.
  3. Add tomato paste, first measure of chipotle sauce and stock to pan and cook for about 2 minutes, until sauce has reduced and thickened slightly. Season to taste.
  4. Prep salad. Add corn to pot of boiling water and cook for about 3 minutes, until tender. Drain and place in a large bowl with remaining salad ingredients. Toss and season to taste. Grate cheese.
  5. Serve kumara topped with Mexican beef, cheese, sour cream and a pinch of garlic chilli blend. Serve salad on the side.
