
Cream Cheese and Mushroom Pizza

Ingredients
Pizza
- 150g cream cheese
- 2 Tbsp basil pesto
- 1 pack tomato paste
- 2 Tbsp sweet chilli sauce
- 3 pizza bases
- 1/2 block cheese, grated
- 1 red onion, thinly sliced
- 1 pack mushrooms, thinly sliced
Salad
- 1 Tbsp sweet chilli sauce
- 2 tsp mustard
- 1/2 lettuce, roughly chopped
- 1 carrot, peeled into ribbons
To Serve
- Remaining basil pesto

Preheat oven to 220°C. Preheat two oven trays. Prep veggies & cheese.

Make pizza. Combine cream cheese and basil pesto in a bowl. In a separate bowl, mix tomato paste and first measure of sweet chilli sauce. Divide tomato paste mixture between bases, spread evenly to cover and sprinkle with grated cheese.

Sprinkle red onion and mushrooms over pizzas and dollop with pesto cream cheese mixture. Season. Cut one pizza in half.

Cook pizza. Transfer 1 1/2 pizzas to each preheated tray and cook for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway through cook time to ensure even cooking.

Prep salad. In a large bowl, whisk together second measure of sweet chilli sauce, mustard and a drizzle of olive oil. Add lettuce and carrot and toss to combine.

Serve slices of pizza drizzled with remaining basil pesto and salad on the side.
