Ingredients
KUMARA FETA CRUSH
- 100g kumara, diced 2cm
- 1/2 carrot, diced 2cm
- 1 Tbsp feta cheese, crumbled
PORK
- 1 pack lean pork sirloin steak
- 1 pack pork spices
APPLE SLAW
- 1/2 pack slaw
- 1/4 apple, grated
- 1 baby bok choy, thinly sliced
- 1/2 tsp mustard
- 1/2 tsp vinegar
- 1/2 tsp red pepper pesto crème
TO SERVE
- 1 Tbsp red pepper pesto crème
Steps

Bring a pot of hot salted water to the boil.

Prep & cook kumara feta crush. Cook kumara and carrot in pot of boiling water for 15-16 minutes, until tender. Drain well and leave to steam for 1-2 minutes, before returning to pot with feta and a pinch of salt. Lightly crush, season to taste and cover to keep warm.

Prep & cook pork. Pat pork dry, season and coat in pork spices. Heat 1/4 tsp oil in a fry-pan on medium-high heat. Cook pork for 3-4 minutes each side, until just cooked through. Rest, covered before slicing. Reserve any resting juices.

Prep apple slaw. Toss together all slaw ingredients in a bowl. Season to taste.

Serve pork with kumara feta crush and apple slaw. Top with red pepper pesto crème and any resting juices.
