Sticky Sesame Cauliflower with Fried Rice

Ingredients

Cauliflower

  • 1 cauliflower, cut into small florets
  • 1 pack cauli spices
  • 2 Tbsp soy sauce
  • 1 pack sticky soy glaze
  • 2 spring onions, thinly sliced
  • 2 packs peanuts

Fried Rice

  • 2 baby bok choy, thinly sliced
  • 2 cups frozen edamame
  • 1 pack ginger & garlic paste
  • 1 pack sesame seeds
  • 2 packs pre-cooked rice
  • 1 Tbsp sesame oil

To Serve

  • 1/2 bunch coriander

Steps

  1. Preheat oven to 220°C. Prep & cook cauliflower. Toss cauliflower with cauli spices, soy sauce and a drizzle of oil on a lined oven tray. Roast for 25 minutes, until browned and tender.
  2. Prep & cook fried rice. When cauliflower has 10 minutes cook time remaining, heat a drizzle of oil in a fry-pan on high heat. Cook bok choy and edamame for 2-3 minutes, stirring. Add ginger and garlic paste and sesame seeds and cook for 1 minute, until fragrant. Add rice and sesame oil and cook a further 2-3 minutes, until rice starts to crisp. Season to taste with soy sauce.
  3. Finish cauliflower. When cauliflower has roasted for 25 minutes, drizzle over sticky soy glaze and roast a further 2-3 minutes, until sauce is hot. Prep spring onions. Remove cauliflower from oven and toss with spring onion and peanuts.
  4. Serve rice topped with cauliflower and coriander leaves.
