Cheesy Beef Baked Potatoes with Southern Slaw

Ingredients
Potatoes
- 400g pre-cooked potatoes
- 1 Tbsp butter
- 50g grated Parmesan cheese
Beef
- 1/2 brown onion, diced
- 1 pack beef mince
- 1 pack potato spices
- 1/2 cup water
- 1/2 pack baby spinach
Slaw
- 1 pack slaw
- 1 pack Southern BBQ mayo
To Serve
- 2 Tbsp sour cream
- Sweet chilli sauce
- 1 pack crispy shallots

Preheat oven to 220°C. Cook potatoes. Tear a square of foil for each potato. Place a potato on each piece of foil, season and drizzle with olive oil. Wrap potatoes and place on an oven tray and bake for about 25 minutes, until tender and heated through. Once cooked, slice each potato halfway through and top with butter and cheese.

Prep slaw. In a bowl, toss together slaw and Southern BBQ mayo. Season to taste.

Prep & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Cook onion and beef for about 5 minutes, until browned. Add potato spices and 1/2 tsp salt and cook for a further minute, until fragrant.

To finish. Add water measure and spinach to the pan, stir to combine and simmer on low for about 5 minutes, or until cooked through and sauce has thickened.

Serve baked potatoes topped with beef, sour cream, sweet chilli sauce and crispy shallots. Serve slaw on the side.
