Smoky Venison Nachos

Ingredients
Venison
- 1 brown onion, finely diced
- 1 carrot, grated
- 1 pack venison & beef mince
- 1 pack nacho spices
- 1 pack tomato paste
- 2 tsp soy sauce
- 1 cup beef stock
- 1 cup frozen corn
Nachos
- 1 1/2 packs corn chips
- 1 pack cheese, grated
Toppings
- 1/2 avocado, diced
- 1/2 lettuce, shredded
- 1/4 cup sour cream
- 1 Tbsp sweet chilli sauce

Preheat oven to high grill. Prep venison veggies & toppings.

Cook venison. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook venison and onion with 1 tsp salt for about 5 minutes, until browned. Add carrot, nacho spices, tomato paste and soy sauce and cook for 2 minutes, until fragrant. Add stock and corn to pan and simmer on low for about 3 minutes, until starting to thicken.

Cook corn chips. Lay corn chips on a lined oven tray and sprinkle with cheese. Grill for 3-5 minutes, until cheese is melted and golden.

Serve nachos with venison and toppings.
