
Honey Soy Beef & Noodle

Ingredients
Beef
- 1 Tbsp minced ginger
- 1 clove garlic, minced
- 2 carrots, cut into thin sticks or grated
- 2 baby bok choy, thinly sliced
- 1 pack beef mince
- 1 pack noodle sauce
- 2 Tbsp soy sauce
- 1 Tbsp sweet chilli sauce
- 2 Tbsp honey
Noodles
- 3 packs udon noodles
To Serve
- 1 spring onion, thinly sliced
- 1 pack chopped peanuts

Bring a full kettle to the boil. Prep veggies. Prep all veggies and set spring onion aside to serve.

Cook noodles. Place noodles in a heat-proof bowl, pour boiling water over noodles and use a fork to separate strands. Leave for 2 minutes then drain. Drizzle with a little sesame oil to prevent sticking.

Cook beef. Heat a drizzle of oil in a large fry-pan or wok on high heat. Cook beef for 4-5 minutes, until browned. Add ginger, garlic and carrots and cook for 2-3 minutes further, until starting to soften. Add bok choy, noodle sauce, soy sauce, sweet chilli sauce, honey and cooked noodles. Toss to combine for about 2 minutes, until sauce has thickened and noodles are coated.

Serve beef and noodles with spring onion and peanuts. Sprinkle with chilli flakes for adults to spice it up!
