Beef Donburi with Toasted Sesame Dressing

Ingredients
Rice
- 1 1/2 cups brown rice
- 2 1/4 cups water
- 1 spring onion, thinly sliced
Beef & Veggies
- 1 carrot, cut in half lengthways & thinly sliced
- 1 broccoli, cut into small florets
- 1 capsicum, thinly sliced
- 1 pack beef stir-fry strips
- 1 pack donburi sauce
Sesame Dressing
- 1 pack sesame seeds
- 1/4 cup mayo
- 1/4 tsp soy sauce
- 1/2 tsp sesame oil
- 1 Tbsp water

Cook rice. Combine rice, water measure and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, covered, for 8 more minutes. Do not lift lid during cooking.

Prep veggies. Prep veggies and set aside.

Make sesame dressing. Heat a dry wok or fry-pan on medium-high heat. Toast sesame seeds, tossing for 1-2 minutes, or until golden. Transfer to a bowl and combine with remaining sesame dressing ingredients. Reserve pan.

Cook veggies. Return pan to medium-high heat with a drizzle oil. Cook carrot and broccoli for 2 minutes, then add capsicum and a splash of soy sauce and cook for 1-2 minutes further. Remove from pan and keep warm.

Cook beef & finish rice. Return pan to high heat with a drizzle of oil. Pat beef dry, season and stir-fry (in batches) for about 2 minutes, until just cooked. Return all beef to pan and pour over donburi sauce. Simmer for 1 minute, until warm through. Prep spring onion and fold through cooked rice.

Serve rice, beef and veggies topped with sesame dressing.
