Spanish Lamb with Couscous

Ingredients

Spanish Lamb

  • 1 Spanish lamb
  • 150g yoghurt

Couscous

  • 3/4 cup chicken stock
  • 3/4 cup couscous

Steps

  1. Preheat oven to 180°C.
  2. Cook lamb. Remove film seal completely, cover with foil, place on an oven tray and cook for 30-40 minutes, or until heated through. Remove from oven on tray. Alternatively, spoon meal into an oven dish, cover with foil and cook at 200°C for about 25-35 minutes, until heated through.
  3. Cook couscous. Bring stock to the boil in a medium pot on high heat. Once boiling turn off heat, add couscous and a pinch of salt, stir, cover and leave for 5 minutes, then fluff up grains with a fork.
  4. Serve couscous topped with lamb and a dollop of yoghurt.
