Creamy Chicken & Spinach Curry with Kachumber

Ingredients
RICE
- 1 pack brown rice
CHICKEN CURRY
- 1 pack lean chicken breasts, diced 2cm
- 2 tsp curry spices
- 1 brown onion, thinly sliced
- 2 cloves garlic, finely chopped
- 2 tsp finely grated ginger
- Remaining curry spices
- 1 can chopped tomatoes
- 1/2 pack baby spinach
- 125g lite sour cream
KACHUMBER
- 1/2 telegraph cucumber, diced 1cm
- 1/2 punnet cherry tomatoes, halved
- 1 capsicum, diced 1cm
- Pinch of chilli flakes (optional)
- 2 tsp vinegar
- 1/2 bunch coriander, chopped

Bring a pot of salted water to the boil.

Cook rice. Cook rice in pot of boiling water for about 25 minutes, until tender. Drain, return to pot and cover to keep warm.

Prep & cook chicken curry. Pat chicken dry and dice 2cm. Toss chicken in a bowl with first measure of curry spices and a pinch of salt. Heat 1 tsp of oil in a fry-pan on medium heat. Stir-fry chicken for 3-4 minutes, until golden (but not cooked through). Remove from pan, cover to keep warm and set aside. Return pan to lowmedium heat pan on heat with 1 tsp oil.

Add onion and 1/2 tsp salt to pan and cook for about 5 minutes, stirring occasionally, until golden. If onion starts to stick, add a splash of water. Add garlic, ginger and remaining curry spices. Cook for 1-2 minutes, until fragrant. If spices stick, add another splash of water.

Add canned tomatoes to pan, bring to a gentle simmer and continue to cook for 2-3 minutes. Add chicken and spinach to pan and cook a further 2-3 minutes, until chicken is cooked through. Remove from heat and stir through sour cream. Season to taste.

Prep kachumber. Toss kachumber ingredients together in a bowl with a pinch of salt.

Serve rice topped with creamy chicken curry and kachumber.
