Creamy Bacon, Mushroom & Cauli Carbonara

Ingredients

Carbonara

  • 1 pack bacon, diced 1cm
  • 1/4 cauliflower, finely diced or grated
  • 1/2 pack mushrooms, thinly sliced
  • 1/4 tsp salt
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 1 cup milk
  • 1/4 cup pasta water
  • 1/4 block cheese, grated
  • 1/2 pack baby spinach

Pasta

  • 1 pack pasta

To Serve

  • 1/4 block cheese, grated

Steps

  1. BEFORE YOU START. Bring a large pot of salted water to the boil.
  2. PREP & COOK CARBONARA. Heat a little oil in a frypan on high heat. Cook bacon for about 6 minutes until browned, add cauliflower, mushrooms and salt and cook for about 4 minutes, until starting to colour.
  3. MEANWHILE, COOK PASTA. Cook pasta in pot of boiling water for about 10 minutes, until tender. Reserve 1/2 cup of pasta water, drain pasta and return to pot with a little oil, to prevent sticking.
  4. FINISH CARBONARA. Add butter to pan and cook for about 30 seconds, until melted. Stir in flour and cook a further 2 minutes. Add milk and pasta water, 1/2 cup at a time, stirring, until smooth and thickened. Remove from heat, stir through drained pasta, cheese and spinach and season to taste. Add a little extra pasta water if you would like a thinner sauce.
  5. SERVE, bacon ā€˜n’ cauliflower carbonara sprinkled with cheese.
