Pulled Pork Burgers with Apple Slaw & Smoky BBQ Sauce

Ingredients

Carrots

  • 3 carrots, thinly sliced into rounds
  • 1 1/2 Tbsp honey (optional)

Pork

  • 1 brown onion, thinly sliced
  • 1 pack pork spices
  • 1/4 cup chicken or veggie stock
  • 1 pack pre-cooked chipotle pork scotch steaks
  • 1 pack smoky BBQ sauce

Slaw

  • 1/2 baby cabbage, finely shredded, 2 1/2 cups
  • 1 apple, thinly sliced

Mustard Mayo

  • 1/4 cup mayo
  • 1-2 tsp mustard (optional, adults)

To Serve

  • 1 pack burger buns, sliced horizontally

Steps

  1. Preheat oven to 220°C. Prep & cook carrots. Toss carrots on a lined oven tray with a drizzle of oil and honey. Season and roast for 20-25 minutes, until golden and tender. Turn once during cooking.
  2. Prep onion & start pork. Heat a drizzle of oil in a medium pot (with a lid) on medium-high heat. Cook onion for about 3 minutes, until softened. Add pork spices and cook stirring for 30 seconds, until fragrant. Add stock, pork and any liquid from bag. Bring to a simmer, cover with lid and cook on low-medium heat for about 8 minutes, until pork is hot through. Stir occasionally. Add a splash of water if mix dries out.
  3. Meanwhile, prep slaw & make mustard mayo. Combine cabbage and apple in a bowl with a drizzle of oil and vinegar. Season to taste. Combine mustard and mayo in a small bowl.
  4. Heat buns. Place buns on a second oven tray. Heat in oven below carrots for about 5 minutes, until warmed through.
  5. Finish pork. When pork is tender, pull apart using two forks. Stir through BBQ sauce and season to taste.
  6. Serve burgers with mustard mayo, slaw and pulled pork. Serve carrots on the side with any remaining slaw.
