Greek Lamb Pizza with Yoghurt & Sesame Cauliflower

Ingredients

Pizza

  • 1 pack tomato paste
  • 1 Tbsp sweet chilli sauce
  • 2 pizza bases
  • 1 pack cheese, grated
  • 1/2 red onion, thinly sliced
  • 1 courgette, diced 1cm
  • 1 pack Greek lamb mince
  • 30g feta cheese, crumbled

Cauliflower

  • 1/4 cauliflower, cut into small florets
  • 1-2 cloves garlic, minced
  • 1/2 Tbsp butter, optional
  • 1 pack sesame seeds
  • 1 carrot, peeled into ribbons
  • 2 tsp sweet chilli sauce

To Serve

  • 1/4 cup yoghurt

Steps

  1. Preheat oven to 220°C. Preheat two oven trays (or pizza stones if you have them). Prep pizzas. In a bowl, combine tomato paste, sweet chilli sauce and a drizzle of olive oil. Mix until smooth. Place pizza bases on a clean bench. Divide pizza sauce evenly between bases and spread to cover. Sprinkle cheese, onion and courgette evenly over bases. Using clean hands, tear small amounts of lamb mince and dot on top of pizza. Top with feta cheese and season.
  2. Cook pizza. Carefully place pizzas on preheated trays (or stones). Cook pizzas for 12–14 minutes, until bases are crisp and golden around the edges and lamb is cooked. Swap trays halfway through cook time ensure even cooking. Cut each pizza into 6-8 slices.
  3. Meanwhile, prep & cook cauliflower. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook cauliflower for about 3 minutes, until nearly tender.
  4. Add garlic, butter (if using) and sesame seeds to pan and cook a further minute, until fragrant. Remove from heat, add carrot, a drizzle of vinegar and sweet chilli sauce. Toss to combine and season to taste.
  5. Serve pizza and sesame cauliflower with a drizzle of yoghurt.
