Tex-Mex Beef Nachos With Sour Cream

Ingredients
Beef
- 1 brown onion, finely diced
- 1 carrot, grated
- 1 pack Tex-Mex spices
- 1 pack beef mince
- 1 can chopped tomatoes
- 1/4 cup beef stock
- 1/2 tsp salt
To Serve
- 1 lettuce, roughly chopped
- 1/2 capsicum, thinly sliced
- 1 pack corn chips
- 125g sour cream

BEFORE YOU START, Heat oven to high grill (if using to toast chips).

PREP & COOK BEEF. Heat a little oil in a fry-pan on high heat and cook onion, carrot, Tex-Mex spices and 1/2 tsp salt for about 3 minutes, until soft. Add beef and cook for about 7 minutes, until browned. Add canned tomatoes and stock and bring to a simmer. Reduce heat to low and cook for 10-12 minutes, or until thickened and reduced. Season to taste.

PREP VEGGIES & TOAST CHIPS (OPTIONAL). Set lettuce and capsicum aside to serve. Place chips onto an oven tray and grill for 2-3 minutes, until warmed through. Watch closely to ensure they don’t burn.

SERVE chips topped with beef, veggies and sour cream.
