
Chorizo Paella with Saffron & Feta

Ingredients
Paella
- 1 pack chorizo grind
- 200g jasmine rice
- 1 pack paella spices
- 1 pack saffron powder
- 1 carrot, grated
- 1/2 capsicum, diced 1cm
- 1 can cherry tomatoes
- 2 cups chicken stock
- 150g frozen peas
To Serve
- 1 pack feta cheese, crumbled
- 1 bunch parsley
- 2 Tbsp sliced almonds
- Pinch of garlic chilli blend (optional)

Prep & cook paella. Heat a drizzle of oil in a large pot on high heat. Cook chorizo for about 5 minutes, until browned. Add rice, paella spices, saffron and 1/2 tsp salt to pot and cook for about 1 minute, until fragrant.

Add carrot, capsicum, canned tomatoes and stock and bring to a simmer. Reduce heat to low and cover with a lid. Cook for about 25 minutes, covered, stirring every 5-10 minutes.

To finish. After 25 minutes, remove pot from heat, add peas, stir, cover and leave to steam for 5 more minutes. Season to taste.

Serve, Paella with feta, parsley, almonds and garlic chilli blend.
