Chorizo Paella with Saffron & Feta

Ingredients

Paella

  • 1 pack chorizo grind
  • 200g jasmine rice
  • 1 pack paella spices
  • 1 pack saffron powder
  • 1 carrot, grated
  • 1/2 capsicum, diced 1cm
  • 1 can cherry tomatoes
  • 2 cups chicken stock
  • 125g frozen peas

To Serve

  • 1/2 pack feta cheese, crumbled
  • 1 bunch parsley
  • 2 Tbsp sliced almonds
  • Pinch of garlic chilli blend (optional)

Steps

  1. Prep & cook paella. Heat a drizzle of oil in a large pot on high heat. Cook chorizo for about 5 minutes, until browned. Add rice, paella spices, saffron and 1/2 tsp salt to pot and cook for about 1 minute, until fragrant.
  2. Add carrot, capsicum, canned tomatoes and stock and bring to a simmer. Reduce heat to low and cover with a lid. Cook for about 25 minutes, covered, stirring every 5-10 minutes.
  3. To finish. After 25 minutes, remove pot from heat and stir in peas. Cover and leave to steam for 5 more minutes. Season to taste.
  4. Serve paella with feta, parsley, almonds and garlic chilli blend.
