
Satay Beef with Garlic Rice

Ingredients
Beef
- 1 pack beef strips
- 1 pack Asian Beef marinade
Rice
- 3 cloves garlic, minced
- 1 pack sesame seeds
- 1 1/2 cups jasmine rice
- 2 1/4 cups water
Greens
- 2 baby bok choy, leaves separated
- 1 broccoli, cut into small florets
- 2 Tbsp soy sauce
Satay Sauce
- 1 pack satay sauce
- 1/4 cup water
To Serve
- 1 pack chopped peanuts
- 1 bunch coriander, roughly chopped
- 1 pack mung beans

Marinate beef. Pat beef dry and toss in a bowl with beef marinade.

Cook rice. Heat a drizzle of sesame oil in a pot on medium-high heat. Add garlic and sesame seeds and cook, stirring, for about 2 minutes, until fragrant. Add rice, 1/2 tsp salt and water measure to pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.

Prep greens.

Cook beef. Heat a drizzle of oil in a fry pan on high heat. Stir-fry beef, in two batches, for 2-3 minutes, until cooked medium. Set beef aside covered to rest, wipe pan clean.

Cook greens & satay sauce. Return pan to medium-high heat with a drizzle of oil. Cook broccoli for 2 minutes, then add bok choy and cook a further minute. Add soy sauce and cook for 1 minute, until veggies are tender. Set aside. Heat satay sauce and water measure in pan on medium heat, for 1 minute, stirring, until slightly thickened. Stir cooked beef through satay and season to taste with soy sauce.

Serve rice topped with greens, beef and satay sauce. Sprinkle with peanuts, coriander and mung bean sprouts.
