Chicken Nasi Goreng with Mung Beans & Peanuts

Ingredients
Nasi Goreng
- 1 pack chicken breast stir-fry
- 1/2 pack green beans, cut in half
- 1 baby bok choy, thinly sliced
- 1 pack nasi goreng paste
- 1 pack lime & coriander rice
To Serve
- 1 pack peanuts
- 1 pack mung bean sprouts
- 1 pack kecap manis

Cook chicken. Heat a drizzle of oil in a large fry-pan on high heat. Pat chicken dry, season and stir-fry for 3-4 minutes, until just cooked. Remove from pan and set aside.

Meanwhile, prep green beans & bok choy.

Cook green beans. Heat another drizzle of oil in same pan on high heat and stir-fry green beans and nasi goreng paste with a splash of water, for 1-2 minutes.

Cook rice. Squeeze rice in pack to separate grains. Tear top and microwave in pack for 2 minutes. Add rice to pan, along with chicken and resting juices, bok choy and 1/4 cup water. Cook for 1 minute, until combined and hot through. Season.

Serve nasi goreng with peanuts, mung bean sprouts and kecap manis.
