
Beef Scotch Steak with Porcini Cream & Asparagus

Ingredients
Mash
- 1 parsnip, peeled & diced 2cm
- 400g potatoes, peeled & diced 2cm
- 1/4 cup milk
Greens
- 1 bunch asparagus, woody ends trimmed
- 2 cloves garlic, thinly sliced
Beef
- 1 pack beef scotch steaks
- 1 pack celery salt spices
To Serve
- 1 pack porcini cream

Preheat BBQ to medium-high heat (if using). Prep & cook mash. Place parsnip and potatoes in a pot and cover with hot tap water. Cook on high heat, covered, for 15-20 minutes, until tender. Drain and return to pot with milk and a knob of butter. Mash until smooth and season to taste.

Prep greens.

Cook beef. Pat beef dry and toss with celery salt spices and a drizzle of oil. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook beef for about 3 minutes each side for medium, depending on thickness, or until cooked to your liking. Rest. Reserve pan. Alternatively, do this on the BBQ.

Cook greens. Wipe pan clean and return to high heat with a drizzle of oil. Add asparagus, garlic and a splash of water and cook for about 3 minutes, until bright green and tender. Season.

Serve mash topped with beef, greens and porcini cream.
