
Hoisin Pork & Green Bean Stir-Fry with Brown Rice

Ingredients
RICE
- 1 pack brown rice
- 1 pack baby spinach
PORK STIR-FRY
- 1/2 brown onion, thinly sliced
- 1 pack lean ground pork
- 1 pack hoisin sauce
- 1/4 cup chicken stock
- 1 Tbsp soy sauce
- 1/2 tsp vinegar
- 1 pack green beans, halved
TO SERVE
- 1 Tbsp roasted peanuts
- 1 bunch mint, leaves picked
- 1/2 bunch coriander, leaves picked

Bring a pot of salted water to the boil.

Cook rice. Cook rice in pot of boiling water for 18- 20 minutes, until tender. Drain and return to pot, along with spinach. Fold together and season to taste.

Prep & cook pork stir-fry. Heat 1 tsp oil in a frypan on high heat. Cook onion for 1-2 minutes, until soft. Add pork, season and cook for 3-4 minutes, breaking up, until brown. Add hoisin sauce, stock, soy sauce and vinegar and simmer for 1-2 minutes, until thick. Add green beans and cook for a further 1-2 minutes, until just tender. Season to taste.

Prep garnishes.

Serve rice topped with hoisin pork. Sprinkle over peanuts, mint and coriander.
