
Beef & Broccoli Pad See Ew Noodles

Ingredients
Beef
- 1 carrot, cut in half lengthways & thinly sliced
- 1/2 broccoli, cut into small florets
- 1 pack beef mince
- 1 pack Asian spices
- 1 Tbsp soy sauce
- 1/2 pack mushrooms, sliced
- 1/4 cup water
- 2 Tbsp pad see ew sauce
Noodles
- 1/2 pack rice stick noodles
To Serve
- 1 spring onion, thinly sliced
- Remaining pad see ew sauce
- 1 Tbsp chopped, roasted peanuts
- Pinch garlic chilli blend

Bring a pot of salted water to the boil. Prep veggies.

Cook beef. Heat a drizzle of oil in a fry-pan on high heat. Cook beef, stirring, for about 5 minutes, until browned. Add Asian spices and soy sauce to pan and cook for 1 minute, until fragrant. Set aside in a bowl. Reserve pan.

Cook noodles. Cook noodles in pot of boiling water for about 5 minutes, until tender. Drain and return to pot with a drizzle of oil to prevent sticking.

Prep & cook veggies. Return pan to high heat with a drizzle of sesame oil. Stir-fry carrots and mushrooms with 1/4 tsp salt for 4 minutes. Add broccoli to pan with a splash of water and cook a further 3 minutes, until veggies are tender.

To finish. Return cooked beef to pan with veggies, along with pad see ew sauce. Toss to combine and season to taste. Thinly slice spring onion.

Serve noodles topped with beef and veggies, spring onion and remaining sauce. Sprinkle with peanuts and garlic chilli blend.
