Chicken Donburi Bowl with Mushrooms & Pickled Ginger Mayo

Ingredients

Chicken

  • 1 pack diced chicken thighs
  • 1 bunch spring onions, sliced 3cm
  • 1 pack sliced mushrooms
  • 1 pack ginger soy sauce

To Serve

  • 1 telegraph cucumber, cut into batons
  • 1 capsicum, thinly sliced
  • 2 packs rice
  • 1 pack pickled ginger mayo
  • 1 pack sesame seeds

Steps

  1. Prep & cook chicken. Heat a drizzle of oil in a fry-pan on high heat. Pat chicken dry and season with pepper. Stir-fry chicken and spring onions for about 5 minutes, until browned. Add mushrooms and cook a further 3-4 minutes. Add ginger soy sauce and cook for 1-2 minutes, until warmed through.
  2. Meanwhile, prep cucumber & capsicum.
  3. Warm rice. Squeeze rice in packs to separate grains. Tear top and microwave in packs for 2-3 minutes.
  4. Serve rice topped with chicken, mushrooms, cucumber, capsicum, ginger mayo and sesame seeds.
