
Chicken Soba Noodle Salad with Sesame Seed Dressing

Ingredients
NOODLE SALAD
- 1/2 bundle soba noodles
- 1/4 cup frozen corn
- 1/4 capsicum, thinly sliced
- 1/2 carrot, grated
- 1/2 pack baby spinach
CHICKEN
- 1 pack lean chicken breast, sliced 1-2cm
- 1 pack lime ponzu dressing
SESAME DRESSING
- 1 tsp sesame seeds
- 1/2 Tbsp soy sauce ^
- 2 tsp water ^
- 1/4 tsp grated ginger
- 1/4 pack peanut butter
TO SERVE
- 1 bunch coriander, chopped

Bring a pot of salted water to the boil.

Prep salad & cook noodles. Add noodles to pot of boiling water, stir to separate and cook for about 2 minutes. After 2 minutes, add corn and continue to cook for 1-2 minutes. Drain, rinse under cold water and leave to drain well.

Prep & cook chicken. Pat chicken dry and slice into 1-2cm strips. Heat 1/4 tsp oil in a fry-pan on high heat until very hot. Add chicken to pan and cook for about 5 minutes, until almost cooked.

Reduce heat to medium and add lime ponzu dressing to pan. Continue to cook for 1-2 minutes, until chicken is cooked. Rest, covered and reserve any resting juices.

Prep sesame dressing. In a medium bowl, whisk together all sesame dressing ingredients. Season.

Finish noodle salad. Add soba noodles and corn to bowl with sesame dressing, along with capsicum, carrot, spinach and resting juices from chicken. Toss to coat and season.

Serve soba noodle salad topped with chicken. Sprinkle over coriander.
