Korean Beef Bowl with Sesame Rice & Korean Chilli Flakes

Ingredients
Rice
- 1 cup brown rice
- 1 1/2 cups water
- 1/2 Tbsp sesame oil
Beef
- 1 pack beef mince
- 1 clove garlic, minced
- 1 Tbsp grated ginger
- 1 pack Korean spices
- 1 carrot, cut in half & thinly sliced
- 1 baby bok choy, thinly sliced
- 1/4 cup beef stock
- 1/2 pack Korean sauce
- 1 tsp soy sauce
To Serve
- 1/4 avocado, diced
- 1/2 pack mung bean sprouts
- 2 Tbsp Korean sauce
- 1 pack sesame seeds
- 1 pack Korean chilli flakes

Cook rice. Combine rice, water measure, sesame oil and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, covered, for 8 more minutes. Do not lift lid during cooking.

Prep beef ingredients & avocado. Set avocado aside to serve.

Cook beef. Heat a drizzle of oil in a wok/fry-pan on high heat. Cook beef for about 5 minutes, until browned. Add garlic, ginger, Korean spices and 3/4 tsp salt to pan and cook for 2 minutes, until fragrant.

Cook veggies. Add carrot, bok choy and stock and cook for a further 3 minutes, until tender. Add first measure of Korean sauce and soy sauce to pan and mix to combine. Remove from heat and season to taste.

Serve rice topped with beef, avocado, mung bean sprouts, remaining Korean sauce, sesame seeds and a pinch of Korean chilli flakes.
