
Mexican Beef & Bean Burritos

Ingredients
Beef
- 1 pack beef mince
- 1 brown onion, finely diced
- 1 clove garlic, minced
- 1 carrot, grated
- 1 pack Mexican spices
- 1 can chopped tomatoes
- 1/2 cup water
- 1 can mild chilli beans
- 2 Tbsp sweet chilli sauce
Salsa
- 2 tomatoes, finely diced
- 1/2 telegraph cucumber, finely diced
- 2 Tbsp Mexican dressing
To Serve
- 1 pack tortillas
- 1/2 pack cheese, grated
- 4 Tbsp sour cream
- Pinch of garlic chilli blend

Preheat oven to 180°C (if using for wraps). Alternatively, heat wraps in microwave. Prep & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Add beef and cook for 3-4 minutes, until browned. Add onion, garlic and carrot and cook a further 2 minutes.

Add Mexican spices and 1 tsp salt to pan and cook for 2 minutes, until fragrant. Add canned tomatoes, water measure, beans and sweet chilli sauce and bring to a simmer. Reduce heat to medium and simmer for about 10 minutes, until thickened.

Prep salsa. Combine salsa ingredients in a bowl and season to taste.

Heat tortillas. Wrap stack of tortillas in foil and bake for about 10 minutes or until heated through. Alternatively, wrap in a damp tea towel and heat in microwave for 1-2 minutes.

Serve tortillas filled with beef and beans, topped with cheese, salsa, sour cream and garlic chilli blend.
