
Mexican Chicken Summer Tacos

Ingredients
Chicken
- 1 pack chicken thighs, sliced 1cm
- 1 pack Mexican flour
Salsa
- 1/2 red onion, finely diced
- 1 cup frozen corn
- 1 capsicum, roughly chopped
Salad
- 1/2 avocado, diced
- 1/4 red cabbage, thinly sliced, 2 cups worth
- 1 bunch coriander, roughly chopped (optional, adults)
- 2 Tbsp mayo
- Juice of 1/2 lime
To Serve
- 1 pack tortillas
- 125g sour cream
- 1/2- 1 pack chipotle sauce (adults only)
- Sweet chilli sauce (optional, kids)
- 1/2 lime, cut into wedges

Preheat oven to 200°C (if using). Preheat BBQ hot plate to medium-high (if using). Prep chicken. Pat chicken dry and slice 1cm. Add to a bowl with 1/2 tsp salt and Mexican flour. Toss well to combine.

Cook chicken. Heat a drizzle of oil in a large-fry pan on medium-high heat. Cook chicken for 6-8 minutes, turning often, until golden and cooked through. Set aside covered to keep warm. Reserve pan. Alternatively, do this on BBQ hot plate.

Heat tortillas. Wrap tortillas in foil and heat in oven for 10-15 minutes, until warm. Alternatively, just before serving, wrap in a damp tea towel and microwave for 1-2 mins, or warm in foil on BBQ hot plate for about 4 minutes each side.

Prep salsa. Add a drizzle of oil to pan and return to high heat. Cook onion with a pinch of salt for 3 minutes. Add corn and capsicum and cook for a further 4 minutes, until starting to char. Remove from heat, stir through a splash of vinegar and season to taste. Alternatively, do this on BBQ hot plate.

Prep salad & lime. Toss all salad ingredients together in a large bowl and season to taste. Keep some salad ingredients separate for fussier little foodies.

Serve tortillas filled with chicken, salsa, sour cream and chipotle/sweet chilli sauce. Serve salad and lime wedges on the side.
