Greek Lamb Pizzas with Whipped Feta

Ingredients
Pizza
- 1 pack tomato paste
- 2 Tbsp GF sweet chilli sauce
- 1 clove garlic, minced (optional)
- 4 sprouted seed pizza bases
- 1 1/2 cups grated cheese
- 1/2 red onion, thinly sliced
- 1 pack Greek lamb mince
- 1/4 pack feta cheese, crumbled
Salad
- 1 tomato, diced 2cm
- 1 capsicum, diced 2cm
- 1 Lebanese cucumber, diced 2cm
- 1 pack olives, roughly chopped (optional, adults)
- 1 bunch parsley, roughly chopped
Whipped Feta
- 1/4 pack feta cheese
- 150g yoghurt

Preheat oven to 220°C. Preheat two oven trays. Prep pizza toppings. In a bowl, combine tomato paste, sweet chilli sauce, garlic and a drizzle of olive oil.

Top pizzas. Divide tomato paste mixture between bases and spread evenly. Sprinkle half of the cheese over bases, then top with onion. Using clean hands, tear small amounts of lamb and dot on top. Top with first measure of feta and remaining cheese.

Cook pizzas. Place 2 pizzas on each tray and cook for 12-14 minutes, until bases are crisp and golden and lamb is cooked through. Swap trays halfway to ensure even cooking. Once cooked, cut pizzas into slices.

Make salad. In a bowl, toss all salad ingredients together with a drizzle of vinegar and oil. Season to taste.

Make whipped feta. In a small bowl, whisk feta and yoghurt together, until smooth. Season to taste.

Serve pizza and salad topped with whipped feta.
