Steak Salad Nicoise

Ingredients

VEGGIES

  • 1 pack diced pumpkin
  • 1/2 pack green beans

SALAD

  • 1 egg
  • 1/4 pack cherry tomatoes, halved
  • 1/2 baby cos lettuce, cut into bite sized pieces
  • 1/2 pack olives
  • 1 pack French herb dressing

BEEF

  • 1 pack lean beef rump steak
  • 1 pack French seasoning

TO SERVE

  • 1 bunch chives, chopped

Steps

  1. Preheat oven to 220°C. Preheat BBQ grill to high (if using).
  2. Cook veggies. Toss pumpkin on a lined oven tray with 1/4 tsp oil. Season and roast in oven for 20 minutes. After 20 minutes, remove tray from oven and add beans. Return to oven to cook for 5 more minutes, until veggies are tender.
  3. Cook egg. Place egg in a small pot and cover with water. Bring to the boil, reduce to a simmer and cook for 3 minutes. Drain and cool under cold tap. Peel, cut in half (set half aside, this is leftover) and season.
  4. Cook beef. Pat beef dry, season with salt and coat in French seasoning. Heat 1/4 tsp oil in a fry-pan on high heat. Cook beef for 3-5 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, do this on the BBQ. Rest, covered, before slicing thinly.
  5. Prep salad. In a bowl, toss cherry tomatoes, lettuce, olives and French herb dressing together. Season to taste.
  6. Serve salad topped with veggies, beef, half an egg and chives.
