
Spanakopita Pie with Greek Salad

Ingredients
Pie
- 1/2 brown onion, finely diced
- 1/2 pack large leaf spinach, washed & roughly chopped
- 2 cloves garlic, minced
- 1 pack spanakopita herbs
- 4 eggs
- 100g feta cheese, crumbled
- 4-6 sheets filo pastry
- 1 Tbsp melted butter or olive oil
Salad
- 1/2 telegraph cucumber, diced
- 1 tomato, diced
- 1/2 capsicum, diced
- 1/2 pack green olives
Serve
- Sweet chilli sauce

Preheat oven to 200°C. Grease a pie dish (about 15 x 15cm). Prep pie. Heat a drizzle of oil in a large, deep fry-pan on medium-high heat. Cook onion for about 2 minutes, until softened. Add spinach, garlic and spanakopita herbs and cook for 2-3 minutes, until spinach is wilted. Transfer mixture to a bowl and add eggs, feta and 1/2 tsp salt. Mix to combine and pour into prepared dish.

Finish pie. Scrunch up each sheet of filo and place side by side on top of the filling, until the surface is completely covered. Drizzle with butter or olive oil and season with salt. Bake pie for about 20 minutes, until egg is cooked and topping is golden and crunchy.

Meanwhile, prep salad. Toss all salad ingredients together in a bowl with a drizzle of olive oil and vinegar. Season to taste.

To finish. Cut pie into squares.

Serve pie with salad and a drizzle of sweet chilli sauce.
