Beef Meatballs with Marinara Sauce & Spaghetti

Ingredients

MEATBALLS & SAUCE

  • 1 pack lean ground beef
  • 1 pack meatball crumbs
  • 1/2 carrot, grated
  • 1 clove garlic, thinly sliced
  • 1 pack marinara herbs
  • 1/2 can tomato passata
  • 1/3 cup chicken stock
  • 1/3 pack spelt spaghetti

SALAD

  • 1 baby cos lettuce, cut into bite size pieces
  • 1/2 pack cherry tomatoes, halved
  • 1 tsp balsamic vinegar

TO SERVE

  • 1 Tbsp feta cheese, crumbled
  • 1 bunch basil, leaves picked

Steps

  1. Bring a pot of salted water to the boil.
  2. Prep & cook meatballs. Combine ground beef, meatball crumbs and 1/2 tsp salt in a bowl. Roll into golf ball-sized meatballs. Heat 1/2 tsp oil in a fry-pan on medium-high heat. Cook meatballs for about 6 minutes, turning often, until almost cooked through. Remove from pan and rest. Keep warm and reserve pan.
  3. Cook marinara sauce. Return reserved pan to medium-high heat with 1/2 tsp oil. Add carrot, garlic and 1/2 tsp salt and cook for 2-3 minutes, until soft. Add marinara herbs and cook for 30 seconds, until fragrant. Add passata and stock to pan and stir to combine. Return meatballs to sauce and simmer for about 5 minutes, until sauce has thickened and meatballs have cooked through. Season.
  4. Cook pasta. While meatballs cooks, cook pasta in pot of boiling water for about 8 minutes, until tender. Drain and return to pot. Cover to keep warm.
  5. Prep & make salad. Toss salad ingredients together in a bowl and season to taste.
  6. Serve pasta topped with meatballs, sauce, feta and basil. Serve salad on the side.
