Ingredients
Couscous
- 1 pack spiced wholemeal couscous
- 1 1/2 cups boiling water
- 1 capsicum, diced
- 2 tomatoes, diced
- 1 pack baby spinach
Beef
- 1 pack Moroccan beef sirloin steaks
To Serve
- 1 pack hummus
- 1 pack feta, crumbled

Before you start, bring a full kettle to the boil. Cook couscous. In a heat-proof bowl, combine couscous and boiling water measure. Stir, cover and leave for 5 minutes.

Meanwhile, cook beef. Heat a drizzle of oil in a small fry-pan on high heat. Pat beef dry and season. Cook for 2-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Wrap in foil to rest, then slice.

Finish couscous. Prep capsicum and tomatoes. Fluff up couscous and add capsicum, tomatoes and spinach to bowl. Toss to combine, drizzle with a little olive oil and vinegar and season. Prep feta.

Serve couscous with beef, hummus and feta.
