Bahn Mi Chicken Noodle Bowls

Ingredients

Patties

  • 1 pack chicken mince
  • 1 Tbsp minced ginger
  • 1 Tbsp GF fish sauce
  • 1 clove garlic, minced
  • 1 Tbsp GF flour
  • 1 Tbsp GF sweet chilli sauce
  • 2 tsp GF soy sauce

Noodles & Veggies

  • 1 broccoli, roughly chopped
  • 1/4 cabbage, thinly sliced, 1 1/2 cups worth
  • 1 carrot, cut into thin sticks or grated
  • 1/2 telegraph cucumber, sliced into rounds
  • 2 packs vermicelli noodles
  • 1 pack noodle dressing

To Serve

  • 1 pack bahn mi sauce
  • 1 pack crispy shallots

Steps

  1. Preheat BBQ hot plate to medium (if using). Bring a large pot of hot tap water to the boil. Prep patties. In a large bowl, combine all patty ingredients together. Set aside.
  2. Prep veggies. Set aside.
  3. Cook patties. Heat a drizzle of oil in a large fry-pan on medium heat. Using a 1/4 cup measure, scoop chicken mixture into pan and cook for 3-4 minutes each side, until golden and cooked through. Cover to rest. Alternatively, do this on the BBQ hot plate.
  4. Meanwhile, cook noodles & veggies. Add noodles and broccoli to pot of boiling water. Remove from heat, cover and leave for 5-7 minutes, or until noodles and broccoli are tender. Rinse under cold water and drain well. Cut noodles in a few places to make them easier to eat, then return to pot and toss through cabbage, carrot, cucumber and noodle dressing. Season to taste.
  5. Serve noodles and veggies, topped with patties, bahn mi sauce and crispy shallots.
