
Lemongrass Beef San Choy Bau with Brown Rice & Peanuts

Ingredients
RICE
- 1 pack Japanese brown rice
- 1 carrot, grated
BEEF
- 1 brown onion, thinly sliced
- 1 pack lemongrass paste
- 1 pack lean ground beef
- Pinch of garlic chilli blend
- 2 tsp fish sauce
SALSA
- 1/2 telegraph cucumber, finely diced
- 1 pack cherry tomatoes, quartered
- 1 pack sweet chilli dressing
TO SERVE
- 1/2-1 iceberg lettuce, separated into cups
- 2 Tbsp chopped peanuts
- 1/2 bunch coriander, leaves picked
- Pinch of garlic chilli blend (optional)
- 1-2 tsp soy sauce (optional)
- 1 lime, cut into wedges

Bring a pot of salted water to the boil.

Cook rice. Cook rice in pot of boiling water for 20- 25 minutes, until very tender. Drain and return to pot, along with carrot and fold together. Season to taste.

Prep & cook beef. Heat 2 tsp oil in a fry-pan on medium-high heat. Cook onion for about 2 minutes, until soft. Add lemongrass paste, ground beef, garlic chilli blend and a pinch of salt and cook for about 5 minutes, stirring often, until browned and cooked through. Stir through fish sauce and season to taste.

Prep salsa. In a bowl, combine cucumber, tomatoes and sweet chilli dressing. Season to taste.

Prep serving ingredients.

Serve lettuce cups filled with rice, beef and salsa. Top with peanuts, coriander and garlic chilli blend. Season to taste with soy sauce and serve lime wedges on the side.
