Ingredients
Rice
- 1 1/2 cups Japanese brown rice
Chicken
- 1 Tbsp soy sauce
- 1 clove garlic, minced
- 1 pack chicken breasts, cut into steaks
- 1/2 cup flour
- 1 egg
- 1 pack panko breadcrumbs
Slaw
- 2 baby bok choy, thinly sliced
- 1 carrot, grated
- 1/2 telegraph cucumber, thinly sliced
- 1 Tbsp sweet chilli sauce
- 2 Tbsp mayonnaise
To Serve
- 1 pack katsu sauce
Steps
-
Bring a pot of water to the boil. Cook rice. Add rice to pot of boiling water and boil for 18-20 minutes, until tender. Drain well, return to pot and cover to keep warm.
-
Prep chicken. In a bowl, combine soy sauce and garlic. Pat chicken dry and cut into steaks. Place your hand flat on top of chicken breast and slice through horizontally. Add chicken to soy mixture and toss to coat well.
-
Prep slaw. In a bowl, toss all slaw ingredients together and season to taste.
-
Crumb chicken. Combine flour and 1 tsp salt in a bowl, whisk egg in a second bowl and place breadcrumbs in a third bowl. Coat each piece of chicken first in flour, then egg, then breadcrumbs, shaking off excess as you go.
-
Cook chicken. Heat a drizzle of oil in a fry-pan on medium heat. Cook chicken, for 3–4 minutes each side (depending on thickness), until golden and cooked through. Add extra oil as needed.
-
Serve rice topped with chicken, slaw and a drizzle of katsu sauce.
