Crispy Chicken Parmigiana Subs

Ingredients

Chicken

  • 1 pack chicken breasts, cut into steaks
  • 1/4 cup flour
  • 1 egg
  • 1 pack panko breadcrumbs
  • 1 pack marinara sauce
  • 1/2 pack grated 3 cheese mix

Subs

  • 1 pack ciabatta buns, cut in half
  • 2 tomatoes, cut in half & thinly sliced
  • 1/2 lettuce, torn
  • 1 pack pesto aioli

Broccoli

  • 1 broccoli, cut into small florets
  • Pinch of garlic chilli blend (optional, adults only)
  • 1 tsp balsamic vinegar (optional)

Steps

  1. Preheat oven to 200°C. Prep chicken. Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Season, add to a bowl with flour and toss to coat. Add egg to same bowl and toss to coat chicken. Place breadcrumbs and 1/2 tsp salt in another bowl. Place chicken in the crumbs, turn to coat each piece well and place on a plate.
  2. Cook chicken. Heat a drizzle of oil in a large fry-pan on medium heat. Cook chicken for 3-5 minutes each side, until golden and cooked through. Drain on paper towels, then place on a lined oven tray. Reserve pan.
  3. Prep veggies & buns. Set veggies aside separately. Place buns on an oven tray and heat in oven for 5-7 minutes, or until warmed through.
  4. Grill cheese. When chicken is cooked, spread marinara sauce evenly over each chicken steak and top with cheese. Place in oven on rack above buns and cook for 3-5 minutes, or until cheese has melted.
  5. Cook broccoli. Wipe reserved pan clean and return to high heat with a drizzle of oil. Cook broccoli for 3-4 minutes, until charred. Toss with garlic chilli blend (adults only), balsamic vinegar and a drizzle of olive oil. Season to taste. Alternatively, keep broccoli plain for little foodies.
  6. Serve buns filled with pesto aioli, chicken, tomatoes and lettuce. Serve broccoli on the side.
