
Cumberland Sausage and Apple Pizza with Honey Mustard Slaw

Pizza with a twist. A Lebanese bread base is topped with yummy cumberland sausage and served with a crunchy honey mustard slaw.
Ingredients
CUMBERLAND SAUSAGE AND APPLE
- 1 can chopped tomatoes
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 4 Lebanese breads
- 1/2 red onion, diced
- 1 apple, core removed and diced 1.5cm
- 2 tomatoes, diced
- 400g Cumberland pork gourmet grind
- 1 1/2 cups grated colby cheese
- 1 1/2 teaspoons pizza spice mix
SLAW
- 1/2 green cabbage, finely sliced
- 1 Lebanese cucumber, cut in half lengthwise, finely sliced
- 1 tablespoon chopped parsley
HONEY MUSTARD MAYONNAISE
- 1 teaspoon honey
- 1 teaspoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1/4 cup mayonnaise
- 1 tablespoon chopped parsley, to serve

oven to 220°C. Line four oven trays with baking paper. Alternatively preheat pizza stones if you have them.

Drain canned tomatoes through a sieve and discard liquid. In a small bowl, mix tomato pulp with garlic and olive oil and season with salt and pepper.

Place Lebanese breads onto prepared trays. Divide tomato mixture between breads and spread to coat. Sprinkle over onion, apples and tomatoes. Using your hands, pull away small amounts of sausage grind and dot on top then sprinkle with cheese and pizza spice mix. Season with salt and pepper.

Cook pizzas for 8–10 minutes, until bread bases are crispy and golden and sausage is cooked. Swap position of trays halfway to ensure even cooking. Slice into wedges.

In a large bowl combine cabbage, cucumber, parsley, a drizzle of olive oil and season with salt and pepper. In a small bowl, combine all honey mustard mayonnaise ingredients together and mix well. Toss half through salad.

divide pizza wedges between plates with slaw on the side. Dollop over honey mustard mayonnaise and sprinkle with parsley.
