Pulled Pork Tacos with Cucumber Salsa

Ingredients
Pork
- 1 pack chipotle pork scotch
- 1/4 cup chicken stock
- 2 soft tacos
Salad
- 1/2 lettuce, shredded
- 1 carrot, grated
- 1 Tbsp mayonnaise
Salsa
- 1/3 telegraph cucumber, finely diced
- 1/4 red onion, finely diced
- 1/2 bunch mint, roughly chopped
Chipotle Cream
- 2 tsp chipotle sauce
- 2 Tbsp sour cream

Preheat oven to 220°C. Cook pork. Place pork, any pork juices and stock in a baking dish. Cover with foil and bake for 25-30 minutes, until heated through and easy to pull apart.

Heat tacos. Wrap tacos in foil and bake for about 10 minutes on rack below pork or until ready to use. Alternatively, just before serving, wrap in a damp tea towel and microwave for 1-2 minutes.

Prep salad & salsa. In a bowl, toss lettuce and carrot with mayonnaise and season to taste. In a second bowl, toss cucumber and onion with mint and a drizzle of olive oil and vinegar. Season to taste.

Make chipotle cream. In a bowl, combine chipotle sauce and sour cream.

To finish. Roughly pull pork apart with two forks. Toss through cooking juices and season to taste.

Serve tacos filled with pork, salad, salsa and chipotle cream.
