Chicken Pad Kra Pao

Ingredients

Chicken

  • 1 pack chicken stir-fry

Noodles

  • 1 pack noodles

Veggies

  • 1 broccoli, cut into small florets
  • 1 pack green beans
  • 1 courgette, cut in half & thinly sliced
  • 1 pack pad kra pao sauce

To Serve

  • 1 bunch Thai Basil, leaves picked
  • 1 pack coconut cashew mix

Steps

  1. Before you start, bring a full kettle to the boil. Preheat BBQ to medium-high (if using).
  2. Cook chicken. Heat a little oil in a fry-pan on medium-high heat and stir-fry chicken for about 8 minutes, until cooked through. Remove from pan and cover to rest. Wipe pan clean and reserve.
  3. Meanwhile, cook noodles. Add boiling water to a pot with a lid. Bring to the boil on high heat. Add noodles and cook for 5-6 minutes, until tender. Drain and return to pot with a drizzle of oil to prevent sticking.
  4. Prep & cook veggies. Return reserved pan to medium-high heat with a drizzle of oil. Add broccoli to pan with beans and cook for 3 minutes. Add courgette and a splash of water and cook a further 1-2 minutes, until tender. Add pad kra pao sauce along with noodles and toss to combine.
  5. Serve veggies and noodles topped with chicken, Thai basil and coconut cashew mix.
