
Hoisin Pork & Beef Green Bean Stir-Fry with Brown Rice

Ingredients
RICE
- 1 pack brown rice
- 1 pack baby spinach
STIR-FRY
- 1/2 brown onion, thinly sliced
- 1 pack lean ground beef and pork
- 1 pack hoisin sauce
- 1/4 cup chicken stock
- 1 Tbsp soy sauce
- 1/2 tsp vinegar
- 1 pack green beans, halved
- 1 courgette, halved lengthways & thinly sliced
TO SERVE
- 1 Tbsp chopped peanuts
- 1 bunch mint, leaves picked
- 1/2 bunch coriander, leaves picked

Bring a pot of salted water to the boil.

Cook rice. Cook rice in pot of boiling water for 18-20 minutes, until tender. Drain and return to pot with spinach. Fold to combine and season to taste.

Prep & cook stir-fry. Heat 1 tsp oil in a fry-pan on high heat. Cook onion for 1-2 minutes, until soft. Add beef and pork, season and cook for 3-4 minutes, until brown. Add hoisin sauce, chicken stock, soy sauce and vinegar and simmer for 1-2 minutes, until thick. Add beans and courgette and cook for a further 1-2 minutes, until just tender. Season to taste.

Serve rice and spinach topped with stir-fry, peanuts, mint and coriander.
