
Thai Makrut Chicken with Super Grains

Ingredients
SUPER GRAINS
- 1 pack super grains
- 2 baby bok choy, thinly sliced
CHICKEN
- 1 pack lean chicken breasts, diced 2cm
- 1 brown onion, thinly sliced
- 2 carrots, cut in half & thinly sliced
- 1 courgette, cut in half & thinly sliced
- 1 pack Thai spices
- 1/2-1 Tbsp Thai yellow curry paste
- 200ml lite coconut milk
- 2 tsp fish sauce
SERVE
- 1/2 pack chopped peanuts
- 1/2 bunch coriander, chopped

Bring a pot of salted water to the boil.

Cook super grains. Add super grains to pot of boiling water and cook for about 20 minutes. Add bok choy, then immediately drain. Return to pot and season. Cover to keep warm.

Prep & cook chicken. Heat 1 1/2 tsp oil in a frypan on high heat. Pat chicken dry and dice 2cm. Cook chicken for 2 minutes, without stirring. Add onion, carrots, courgette and 1/2 tsp salt. Cook for 2-3 minutes, until softening.

Add Thai spices, curry paste and coconut milk. Reduce heat to medium and cook for 5-6 minutes, until chicken is cooked through and sauce has thickened. Season with fish sauce.

Prep coriander.

Serve super grains topped with chicken, peanuts and coriander.
