Sticky Beef with Rice & Cucumber Peanut Salsa

Ingredients

Beef

  • 1 pack beef sirloin steaks
  • 1 pack Nadia’s Asian marinade

Salsa

  • 1 Lebanese cucumber, finely diced
  • 1 spring onion, thinly sliced
  • 1/2 pack peanuts

Rice

  • 1/2-1 pack Asian greens, thinly sliced
  • 1 pack brown rice
  • 1 pack sesame seeds

Steps

  1. Cook beef. Heat a drizzle of oil in a medium fry-pan on high heat. Pat beef dry and cook for 2-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Remove pan from heat, add Asian marinade and toss beef to coat. Set aside to rest. Just before serving, slice beef.
  2. Meanwhile, prep salsa. In a bowl, toss cucumber and spring onion with peanuts and a pinch of chilli flakes. Drizzle with oil and vinegar and season to taste.
  3. Prep Asian greens & heat rice. Squeeze rice in pack to separate grains. Tear top and microwave in pack for 2 minutes. Toss rice with Asian greens, sesame seeds and a drizzle of olive oil. Season to taste.
  4. Serve beef with rice and salsa.
