Greek Spiced Lamb & Kumara Salad with Tzatziki

Ingredients
Salad
- 150g kumara, diced 2cm
- 1/4 red onion, cut into wedges
- 1/2 tsp Greek spices
- 1/2 capsicum, diced 2cm
Lamb
- 1 pack lamb leg steak
- Remaining Greek spices
To Serve
- 1/2 Lebanese cucumber, finely diced
- 1 pack tzatziki

Preheat oven to 220°C. Prep & cook salad. Toss kumara and onion on a lined oven tray with first measure of Greek spices and a drizzle of oil. Season and roast for an initial 15 minutes. After 15 minutes, add capsicum to tray with kumara and cook a further 15 minutes, until veggies are tender.

Prep & cook lamb. Pat lamb dry, season and toss with remaining Greek spices and a drizzle of oil. Heat a drizzle of oil in a frypan on medium-high heat. Cook lamb for 4-6 minutes each side for medium (depending on thickness) or until cooked to your liking. Rest, covered.

To finish. Prep cucumber and toss in a bowl with a drizzle of vinegar. Thinly slice lamb.

Serve salad topped with lamb, cucumber and a dollop of tzatziki.
