Beef Steak with Chips, Béarnaise & Charred Broccoli

Ingredients
Chips
- 600g roasting potatoes, cut into chips
- 1 carrot, cut into chips
- 1 parsnip, cut into chips
- 200g kumara, cut into chips
- 10g chip seasoning
Beef
- 600g beef rump steaks
Broccoli
- 1 broccoli, cut into small florets
- 1 Tbsp butter (optional)
To Serve
- 100g Béarnaise sauce

Preheat oven to 230°C. Prep & cook chips. Toss potatoes, carrot, parsnip and kumara with chip seasoning and a drizzle of oil on a lined oven tray. Spread out in a single layer. Use two trays if you don’t have a big enough tray. Cook for about 25 minutes, or until golden and tender. Leave some chips plain for fussier little foodies.

Prep & cook beef. Pat beef dry and season. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook beef for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered, before thickly slicing against the grain. Toss back through any resting juices. Reserve pan.

Prep & cook broccoli. Return reserved pan back to medium-high heat with a drizzle of oil. Cook broccoli for 3-5 minutes, until charred. Season, add butter and a drizzle of balsamic vinegar and toss for about 1 minute, until coated. Season to taste with salt and pepepr. Keep broccoli plain for little foodies.

Serve beef, chips and broccoli with Béarnaise sauce.
