Pulled Beef Burrito Bowl with Chipotle Sour Cream

Ingredients

RICE

  • 150g brown rice
  • 150g frozen corn

BEEF

  • 1 brown onion, thinly sliced
  • 15g Mexican spices
  • Pinch of chilli flakes (optional)
  • 70g tomato paste
  • 400g pulled beef
  • 1 cup chicken stock

CHIPOTLE SOUR CREAM

  • 125g lite sour cream
  • 15-25g chipotle sauce

TO SERVE

  • 1/2-1 iceberg lettuce, shredded
  • 2 tomatoes, diced
  • 1 Lebanese cucumber, diced
  • 20g pumpkin sunflower seed mix

Steps

  1. Bring a pot of salted water to the boil.
  2. Cook rice. Cook rice in pot of boiling water for 20- 25 minutes, until tender. Add corn to pot for the final 3 minutes of cook time. Drain, return to pot and cover to keep warm.
  3. Prep & cook beef. Prep onion. Heat 1 tsp oil in a fry-pan on medium-high heat. Cook onion for about 2 minutes, until softened. Add Mexican spices, chilli flakes and tomato paste and cook for about 1 minute, until fragrant.
  4. Add pulled beef, stock and 1/2 tsp salt and bring to a simmer. Simmer on medium heat for about 5 minutes, until thickened. Season to taste with salt and pepper.
  5. Make chipotle sour cream. In a small bowl, combine sour cream and chipotle sauce with a pinch of salt.
  6. Prep serving ingredients.
  7. Serve rice, beef, lettuce, tomatoes and cucumber topped with chipotle sour cream and seeds.
